We build this site toward the Web Content Accessibility Guidelines, WCAG 2.1, Level AA. That is the yardstick we measure against.

Construimos este sitio hacia las Pautas de Accesibilidad para el Contenido Web, WCAG 2.1, Nivel AA. Esa es la medida que usamos.

We are not going to tell you the site is perfect or certified. No honest website says that. We will tell you what we have done, what we know is still rough, and how to reach a human if something stops you.

No te vamos a decir que el sitio sea perfecto ni que esté certificado. Ningún sitio honesto dice eso. Te vamos a decir qué hemos hecho, qué sabemos que sigue imperfecto y cómo hablar con una persona si algo te detiene.

• Every control you can reach with the Tab key shows a clear focus ring, on light sections and dark ones alike. We checked every stop on every page with the keyboard, not just with a scanner.Cada control al que llegas con la tecla Tab muestra un borde de enfoque claro, tanto en las secciones claras como en las oscuras. • A skip to content link is the first thing you reach, so you do not have to tab through the whole menu on every page.Un enlace para saltar al contenido es lo primero que encuentras, para que no tengas que pasar por todo el menú en cada página.

We do not use an accessibility overlay or a widget that claims to fix a site automatically. Those do not work, and people who use screen readers tend to turn them off. We fix the underlying code instead.

• The map and the spam check on the contact page. Both are panels built by an outside company and dropped into our page. When you tab into one, the focus outline is drawn by their code, not ours, and we cannot make it clearer from our side. Both are announced by name when you reach them. Nothing is trapped there: our address, our hours, and a directions link are all on the same page as plain text, so you never need the map to find us.El mapa y el filtro de spam en la página de contacto. • Both languages live in every page. This site switches between English and Spanish instantly, and it does that by shipping both versions of the text in the page and hiding one. A screen reader reads only the version you can see, so this should not affect you. An automated accessibility scanner, though, may report things like two page headings. That is the trade-off we chose for an instant language switch with no reload.Los dos idiomas viven en cada página. • The cut guides. The beef and pork diagrams show a little note when you hover or focus a dot. Every dot is a real button with a spoken label, and the whole list is repeated as plain text right underneath the picture, so nothing is only inside a pop-up. It is still a picture-first design, and a plain list is easier.Las guías de cortes. Los diagramas de res y de puerco muestran una nota cuando pasas el cursor o enfocas un punto. • Small targets in the top bar. The menu links and the EN / ES switch in the header are about twenty pixels tall. We re-check the site with a keyboard and a color contrast check whenever we make a real change to it, and we update this page when the list above changes. The date at the top is typed in by hand, so it means something.

Revisamos el sitio otra vez con teclado y con una prueba de contraste de color cada vez que le hacemos un cambio real, y actualizamos esta página cuando cambia la lista de arriba. La fecha de arriba se escribe a mano, así que sí significa algo.
